Description

This coffee is a crowd favorite. Processed as an anaerobic natural, is challenges everything you know about vietnamese coffee. Super clean for an anaerobic natural, pronunced acidity, intense sweetness, lingering aftertaste. Zanya is doing a wonderful job with all of their processing, but this one really stands out.

Producer

ZANYA:

We first met Lim and Marian on a Trip to Vietnam in 2024. I knew then and there that i will one day offer their coffees. Their attention to detail, constant drive for improvement and support of the K'Ho Minority makes for a very unique product.

Processing

Marian and Lim call this processing anaerobic natural.
It is their approach to fermentation taking place in a strictly controlled, oxygen-free environment to unlock distinct flavors and aromas. Carefully selected, cleaned, and floated cherries are placed into airtight containers where natural enzymes and microorganisms break down the sugars and mucilage. Over an 80 to 100-hour fermentation period, the absence of oxygen encourages specific yeasts and bacteria to thrive, giving them precise control over temperature and environment while preventing unwanted flavors. By fermenting the whole cherry without oxygen, this method preserves intense sugars and yields dynamic fruity, berry, and wine-like characteristics rarely found in traditional processing. The result is an expressive, highly consistent cup with balanced sweetness, and a creamy, syrupy body with a smooth, lingering mouthfeel.

Brewguide

ESPRESSO:
These anerobic naturals work really well as Turbo Style Shots. That means a Ratio of around 1:3 (for example 16g:48g) in around 15-18s.

FILTER:
A tigher ratio and faster extraction put the focus on the volatile aromas und mouthfeel/sweetness that make this coffee so unique.
