Description

Another coffee from Zanya. We have never heard of this particular process, not to be confused with white/yellow/red/black honey. These refer to the amount of murcielage left on the parchment after depulping (more murcielage = darker colour = more sugar for fermantation), while pink refers to the colour the actual parchment takes on during the anaerobic stage of this process.

This coffee makes a good filter, but really shines on espresso. More sweetness and lower acidity than our carbonic washed from Zanya.

Producer

ZANYA:
We first met Lim and Marian on a Trip to Vietnam in 2024. I knew then and there that i will one day offer their coffees. Their attention to detail, constant drive for improvement and support of the K'Ho Minority makes for a very unique product.

Processing

Marian and Lim call this processing pink honey.
After depulping the cherries while retaining their sticky mucilage, the coffee undergoes a controlled 80-hour anaerobic fermentation in shallow tanks. By keeping the tanks relatively shallow and maintaining a stable temperature environment, the processing ensures even fermentation from top to bottom while giving them precise control over flavor development.
The parchment—which takes on a distinct pink hue from the retained mucilage—is then transferred to drying beds where active fermentation continues. The coffee is moved multiple times a day to manage the ongoing fermentation, prevent over-fermentation, and deliver an evenly dried, pristine product with a signature flavor profile.
