Description

This coffee is our current baseline, easy coffee for everyday. It is produced by Zanya in Vietnam. Marian and Lim operate this processing station that works uniquely with coffee cherry from the K'Ho minority in central Vietnam, to which Lim belongs. Like all of their coffees, Zanya does a really good job with their processing. The carbonic washed tastes just like a washed coffee, just slightly more intense and sweet. Runs stable and tastes incredible as espresso or filter.

ZANYA:
We first met Lim and Marian on a Trip to Vietnam in 2024. I knew then and there that i will one day offer their coffees. Their attention to detail, constant drive for improvement and support of the K'Ho Minority makes for a very unique product.

Processing

Marian and Lim call this processing carbonic washed.
After depulping the coffee cherry, the coffee is placed into sealed bags for an 80-hour dry fermentation without adding any water. As fermentation progresses, internal pressure builds and creates a low-oxygen, CO₂-rich environment that slows down microbial activity, giving them greater control and consistency over the final profile. By keeping the process completely dry, they prevent delicate sugars and aromatic compounds from getting diluted in water. This extended fermentation encourages deeper sugar development and a rounder, more syrupy mouthfeel while keeping the flavor profile crisp and transparent with a balanced acidity and pronounced sweetness.
